The aroma of grilled chicken filled the air as Bacolod City officially opened its much-anticipated Chicken Inasal Festival yesterday, May 21, 2025, at the temporary Manokan Country stalls.

The ceremonial grilling marked the start of a five-day celebration dedicated to the city’s iconic chicken inasal, running until Sunday, May 25.

With a budget of P1.25 million, the city government has promised a vibrant and extravagant festival, maximizing resources and support from sponsors to deliver a memorable experience for locals and visitors alike.

This year’s theme, “Fire and Fusion,” highlights the diversity and creativity in preparing chicken inasal, with various cooking styles set to be showcased in the festival’s signature cook-off events.

Festival activities are spread across major venues, including SM City Bacolod, The Upper East Megaworld, and Ayala Malls Capitol Central.

Among the highlights are the much-awaited Longest Inasal Grill at The Upper East today, and the Chicken Inasal Arena Dance Competition on Sunday, which will serve as the festival’s grand finale.

The program also features food spread competitions, culinary workshops, beer pairings, nightly entertainment, and the prestigious Chicken Inasal Awards.

Meanwhile, to ensure peace and order throughout the festivities, the Bacolod City Police Office (BCPO) has deployed 276 police personnel across all festival sites.

BCPO Director Police Colonel Joeresty Coronica assured the public of heightened police visibility, emphasizing professionalism and respect for human rights among officers on duty.

He underscored that the deployment not only maintains order but also demonstrates the police force’s commitment to allow both locals and tourists to enjoy the festival safely.

As the festival unfolds, Bacolod invites everyone to join the celebration of culinary heritage, culture and community spirit — proving once again why it is the “Chicken Inasal Capital of the Philippines.”/JB, WDJ
